Abstract:
This study was conducted at Sudan University of Science and Technology, college of
Agricultural Studies, Department of food Science and Technology in order to
recognize rosella seed oil and determine Physicochemical characteristic.
The seeds were cleaned and crushed for proximate analysis which include oil content
, protein content , moisture content , total ash , crude fiber, and carbohydrate , then
the results were recorded 21.1 , 27.1 , 7.2 , 6.7, 16.2 , 21.7 respectively.
The oil was extracted by solvents extraction, the physical properties of oil refractive
index , moisture content , specific gravity and color were tested the result were
recorded 1.4643 , 2.07 , 0.8985 yellow 70 red 2.9. respectively.
Also the chemical properties which are peroxide value, free fatty acids, saponification
value, and iodine value were tested the results were recorded 1.2, 2.5, 192, 103,
respectively.
Rosella seed oil contain great amount of oil with good physical and chemical
characteristics. It could be one of the promising source of vegetable oil production in
Sudan.
