Abstract:
Samples of street food were collected from different sources in Khartoum
state. The samples were Shawerma, Tamia, ice cream and peanut butter.
The main goal of this research was to study the safety aspects of these foods.
Microbial and the chemical characteristics were evaluated. Analyses were carried
out at central lab of Faculty of Agric. University of Khartoum and Central
petroleum laboratories.
The total bacterial count(cfu/g) in Shawerma was 5.3x103 in Albait Alsory
samples and 8.4x103in the sample collected from the College of Agricultural
studies college and 5.3x104in the sample collected from Omdourman market.
Coliforms count(MPN/100g)found to be nil ,16.7 and 26.0 in Albait Alsory
,College of Agricultural Studies and Omdurman market, respectively .The sample
of college of Agriculture Studies were found to be highly contaminated by total
bacterial count and moulds and yeasts compared to other two sources. On the other
hand Omdurman sample were found to be highly contaminated with coliforms.
The bacterial count in Tamia was 5.6x103 in Albeit Alsory samples and
3.9x104in the sample from the Agricultural College and 4.9x103 in the sample from
Omdurman . Coliforms and moulds and yeasts in the Tamia samples were not
detected in Albait Alsory and College samples, while Omdurman market samples
recorded 1.7x10 and 5.8x 102, respectively ,also the microbial count in ice cream
was 5.9x104 in the factory ice cream and 3.6x103 in Almazalat ice cream
and5.9x104 in the home made ice cream. The factory ice cream and Almazalat ice
cream were free of E.coli, Salmonella spp and Staph.aureus, but the samples from
the home made ice cream were free from E. coli and positive for Salmonela spp
and Staph. aureus .The bacterial count in peanut butter was 5.4x10 3in the sample
collected from Almarkazi (Shambat) and 5.6x104 in the samples collected from the
crusher
and 6.4x104in the samples collected from Omdurman market. The

coliforms and moulds and yeasts were not detected in Albait Alsory and College
samples while Omdurman sample recorded 1.7×10 and 5.8×102(cfu/g),
respectively.
The lead level (ppb) in Shawerma collected from Albait Alsory was 24.84 and 2.90
in the samples collected from the College of Agric and -0.22 in the samples
collected from Omdourman market. The lead in ice cream was 5.10 in the samples
collected from Almazalt and 8.32 in the samples collected from the factory
and.0.26 in the samples of the home made ice cream. Lead in Tamia was 3.04 in
the samples collected from Albait Alsory and 3.98 in the samples collected from
the College and 0.20 in the samples collected from Omdorman market .Lead in
peanut butter was 3.20 in the samples collected from Almarkzi (Shambat) and 3.90
in the samples collected from the crusher and 0.16 in the samples collected from
Omdourman market.
The Aluminum level (ppm) in Shawerma collected from Albait Alsory was
1.37 and <0.30 in the sample collected from the College and 1.75in the samples
collected from Omdorman market. The aluminum in ice cream was 3.5 in the
samples collected from Almazalt and <0.30 in the samples collected from the
factory and <0.30 in the samples of the home made ice cream. Aluminum in Tamia
was <0.30 in the samples collected from Albait Alsory and 6.16 in the sample
collected from the College and 2.75 in the samples collected from Omdorman
market. And aluminum in peanut butter samples was 4.11 in the samples collected
from Almarkzi (Shambat) and-<0.30 in the samples collected from the crusher and
2.75 in the samples collected from Omdourman market.
The peroxide value(%) in Shawerma was not detected in Albeit Alsory
samples and in the samples collected from the College samples and 10 in the
samples collected from Omdorman market. The peroxide value in Tamia was 4 in
all the samples collected from Albait Alsory, the College and Omdorman market

samples..The peroxide value in ice cream was also 4 in all the samples collected
from the factory, Almazalat and the home made ice cream. The peroxide value in
peanut butter was not detected in the samples collected from Almarkazi (Shambat)
and 4 in the samples collected from the crusher and 3 in the samples collected from
Omdurman market.
